Tetsuya Wakuda loves to wax lyrical about Tasmanian food, but yesterday as he disembarked at the Devonport wharf he had to pick up his bottom lip before he could say much.

The world-renowned Sydney- based chef had just toured the 76-metre Sealord trawler Rehua as it prepared to go out fishing for blue grenadier off the West Coast for the next two months.

Tetsuya said he could not quite believe the extent of the processing operation going on inside the vessel.
